Traditionally, sambal raja Kutai is prepared using a mortar and pestle, which allows the flavors of the fresh ingredients to fully meld together, creating a deeply flavorful and aromatic condiment. Grinded paste is then added to diced eggplants, long beans and onions, stirred and served while warm.
