Salsa Asiago

Salsa Asiago is an American cheese produced in Wisconsin. This hard cheese has a natural rind and it's made from pasteurized cow's milk. The cheesemakers rub the wheels with a combination of onions, garlic, dried tomatoes, and ancho peppers marinated in olive oil.

The aromas are pungent and nutty and the flavors are nutty, sharp, creamy, spicy, and garlicky. The texture is open, firm, compact, and smooth. It's recommended to serve it with crusty bread, crackers, or nuts. Pair it with a glass of light red wine.
