Razor Russet is an American apple variety that was discovered in 1960 in Wallingford, Kentucky as a limb mutation which grew on a Golden Delicious tree. The apples are large, round, and sometimes slightly conical with a golden-brown skin.
Beneath it, the texture of the flesh is coarse, while the flavors are rich, sweet, tart, and spicy. Razor Russet apples ripen in fall and they’re moderately resistant to major diseases. It’s recommended to use them for making cider and desserts, but they’re also often dried.
