Old Winchester

Old Winchester (also known as Old Smales) is an aged version of Winchester cheese. Produced in Landford, this Gouda-style cheese is made from Friesian cow's milk and is much drier and harder than regular Winchester. It ages for 18 months in order to develop its typical flavors that are full, caramel-like, and sweet with a crunchy finish.


The texture is dry, flaky, and crystalline. Old Winchester has won multiple awards, including a Gold Award at the Artisan Cheese Awards at Melton Mowbray in 2019. It's recommended to use it as a replacement for hard Italian cheeses.
