Kendal mint cake

Kendal mint cake is a traditional confectionery originating from Kendal in Cumbria. This glucose-based, peppermint-flavored bar has a grainy texture and high content of sugar. The so-called “cakes” are usually made with a combination of water, sugar, glucose, and peppermint oil.

The mixture is constantly stirred while it cooks, and it’s then poured into molds and left to set before it’s cut up into individual bars. These minty bars are a favorite of walkers, hikers, and mountain climbers in the United Kingdom, and the first Kendal mint cake was made in 1869 by Joseph Wiper.

There are three main types of Kendal mint cakes: white, brown, and chocolate-covered.
