Dabu-dabu

Dabu-dabu is an Indonesian sauce originating from Manado, North Sulawesi. It's made with a combination of tomates, red chili, shallots, cayenne peppers, salt, sugar, and lime juice. The raw sliced ingredients are mixed in a bowl, then combined with oil.

Dabu-dabu is traditionally used as a condiment for grilled fish or chicken, which are often accompanied by steamed rice. The condiment is especially popular with various recipes of ikan bakar grilled fish.
