Comiteco is a Mexican spirit distilled from fermented agave sap (aguamiel), sometimes with the addition of sugar. Although it is often compared to mezcal and other agave spirits, comiteco is considerably different because it is not produced from roasted agaves and does not include the smoky element found in most mezcals.
It is a pleasant and smooth drink with a dominant herbaceous character complemented by subtle earthy nuances. Comiteco hails from Comitán, Chiapas, and its history dates back to the Spanish colonial era. Industrial production started in the early 20th century, but the agave shortage and high taxes led to a complete halt on industrial-scale production in the 1960s.
