Caldo de queso

Caldo de queso is a simple Mexican soup featuring potatoes, green chilies, chicken broth, and cheese. It is important to add the cheese last in order for it to turn the soup creamy without producing large mounds of cheese in the liquid. The soup is traditionally served with fried corn tortilla chips on the side.

"Caldo de Queso flavored at its point, offering the authentic flavor of its original recipe with chili, potato and tomato; it is for a reason one of the leaders in the list of favorites in Palominos."

"Some do it brothy but the best arrive thick, with a molten layer of cheese cream obscuring some green chiles and seriously cooked potato chunks. The soup can be made with a variety of cheeses like casero or Chihuahua, but Toto's Tacos actually uses cubes of fresh mozzarella, which melt up nicely when you wrap them in a tortilla."

This place exists since i was a little kid. My parents always took me there on Sundays and i keep going every time i visit Hermosillo, Sonora. You can find many different choices of antojitos Mexicanos but Caldo de queso always will be one of my options!
