Anari is a white Cypriot cheese made from goat’s or sheep’s milk. Its texture is creamy, flaky, and brittle, while the flavors can best be described as mild and salty. The cheese can be made in two varieties – fresh or dry.
Fresh anari has a soft texture and a mildly salty, slightly sweet flavor, which is the reason why it’s often served for breakfast, accompanied by honey or fruit jams. Dry anari is salted, then dried, either in the sun or in the oven. It has a hard texture, which is the reason why it’s commonly grated and used for garnishing a variety of pasta dishes.
