Champagne "Les Grands Terroirs" from Veuve Fourny & Fils embodies the quintessence of the Champagne region's terroir. This cuvée is a blend of 80% Chardonnay and 20% Pinot Noir, meticulously hand-harvested from the finest parcels of the Côte des Blancs.
Approximately 80% of the grapes are sourced from Premier Cru vineyards, predominantly in the Vertus area, with the remaining 20% coming from Grand Cru plots. After harvesting, the wine undergoes a seven-month maturation on lees before bottling, with minimal sulfur usage.
This process utilizes a combination of tanks and oak barrels, contributing to its complexity and richness of flavor. The aging continues in bottles, on lees, within 19th-century cellars maintained at a consistently low temperature, further enhancing its depth and character. This cuvée incorporates 40% reserve wines aged in oak barrels, adding to its intricate profile.
