Smoked bologna sausage is a traditional dish originating from Oklahoma. Also known as Oklahoma prime rib or Oklahoma tenderloin, the dish consists of thick barbecued slices of bologna sausage that are scored and rubbed with spices. During the process, the strong flavor of smoke seeps into the porous texture of bologna.
Ferco barbecue puts out great food, some of which includes smoked bologna. I consider their smoked bologna to be pretty "traditional" here in Oklahoma.
