Pearà

Pearà is a traditional Veronese sauce from the Veneto region of Italy, known for its rich, creamy texture and bold peppery flavor. The name "pearà" comes from the Venetian word for "pepper", which is one of its defining ingredients.

This sauce is a classic accompaniment to bollito misto, the famous Italian boiled meat dish, and has been a staple of Veronese cuisine for centuries. Made from breadcrumbs, beef marrow, black pepper, and broth, Pearà is slowly cooked to achieve a thick, velvety consistency.

The key to its unique taste lies in the generous use of black pepper, giving it a distinctive spicy yet comforting flavor. Traditionally, it is slowly simmered for several hours, allowing the ingredients to blend harmoniously into a rich, aromatic sauce.

Some variations may include butter, olive oil, or grated cheese to enhance the depth of flavor.
