Holey Cow is an American cheese produced in Paso Robles, California by Central Coast Creamery. This Swiss-style semi-soft cheese is made from cow's milk. Beneath its natural rind, there is a creamy and smooth texture of the body with numerous small eyes dispersed throughout it.
The aromas are rich and buttery, while the flavors are creamy and buttery. The cheese has some piquancy but no true bite. It ages about 2 months before it's ready for consumption. The name Holey Cow is a play on words, referring to the holes (eyes) in the paste.
