Carmody is an American cheese hailing from California, where it's produced by Bellwether Farms. The cheese is made from Jersey cow's milk and it's aged for at least 6 weeks. Underneath its natural rind, the texture is firm, springy, and fudge-like.
The aromas are fresh, while the flavors are buttery, milky, grassy, citrusy, and sweet with hints of caramel. Carnody has won many awards, including a gold medal in the semi-hard cheese category at the 2011 North American Jersey Cheese Awards.
