Grappa dell'Alto Adige, also known as Südtiroler Grappa PGI, is a grape marc spirit produced exclusively from grapes grown and vinified in the Südtirol/Alto Adige region of Italy. The production area includes the entire territory of the Autonomous Province of Südtirol/Alto Adige.
This grappa is made by directly distilling fermented or semi-fermented pomace from local wine production, using either continuous or discontinuous distillation systems. The distillation may involve direct steam, direct flame, or indirect steam after adding water to the still.
The fermented pomace may be aged in unvarnished or uncoated wooden containers. Grappa aged for at least 12 months can be labeled as “Vecchia” or “Invecchiata,” while products aged for 18 months or more are designated as “Riserva” or “Stravecchia.” Grappa dell'Alto Adige can be enhanced with additional ingredients like sugars (up to 20 grams per liter), and caramel, but only for aged grappa.
The spirit can also feature a reference to specific grape varieties or wine DOCs from the region. To be released for consumption, it must have an alcohol content of at least 40% by volume. The production of grappa in Südtirol has deep historical roots tied to the wine-growing traditions of the region.
