Gnocchi al sugo d'oca

(Gnocchi in Goose Sauce)

Gnocchi al sugo d'oca is a traditional dish originating from Umbria. It consists of gnocchi in goose sauce. The gnocchi are made by boiling potatoes in salted water, mashing them, and mixing them with flour. Once shaped, they're boiled in salted water and removed when they float to the top.


They are topped with a sauce consisting of olive oil, carrots, celery, onions, goose meat, tomatoes, dry white wine, and salt. When everything is assembled, the dish is usually sprinkled with grated pecorino just before serving.
