Brillat-Savarin is a luxurious French triple-cream cheese made from cow's milk, renowned for its rich, buttery flavor and velvety texture. At Fromagerie Chez Virginie, this cheese is received fresh and meticulously aged in their cellars for about a month to develop its full character.


The aging process allows the cheese to form a delicate white to ivory-colored bloomy rind, while the interior remains smooth and homogeneous, offering subtle aromas of mushrooms and hazelnuts, complemented by a gentle cream and butter scent. Brillat-Savarin pairs wonderfully with a fresh organic Rosé from Provence, such as "Pétale de Rose" by Régine Sumeire, or a white Sancerre like "Cuvée Spéciale Les Shasseignes" by Philippe Raimbault.


In culinary applications, it can be enjoyed simply on toasts, perhaps enhanced with slices of smoked duck breast for an exquisite experience.

Chez Virginie is a renowned Parisian cheese shop located in the heart of Montmartre, with a tradition dating back to 1946. Founded by the Boularouah family, this fromagerie is known for its dedication to quality and authenticity. Virginie Boularouah, a master cheesemonger and heir to the family craft, personally selects and ages the cheeses in her own cellars, ensuring optimal flavor and maturity.
