Fricassee is a traditional sandwich that's packed with flavor, but also with lots of calories. The base is made with flour, eggs, oil, salt, water, and yeast, and it is then shaped into round or elongated rolls which are fried in hot oil and filled with tuna, hummus, boiled eggs, capers, olives, harissa, and boiled potatoes.
"In the heart of the Medina of Tunis it's an institution for decades. They prepare fricassees in the afternoon. It is an imperative gourmet break when wandering through the souks of Tunis!"
"Outside of Ramadan he makes Fricassee with Méchouia salad, absolutely delicious, with a nice quarter of a hard-boiled egg, a delight, quite rich in flavour, so don't do as I did, don't feel like you have to eat four in a row."
"Small and easy to take away, it is the Tunisian snack par excellence. Eat it hot to enjoy the crispy outside and soft inside. Baigné Tunis Médina, in the centre of town, a boui-boui that makes excellent fricassees."
