Coniglio con peperoni e olive

Coniglio con peperoni e olive is a traditional dish originating from Puglia. The dish is usually made with a combination of rabbit meat, onions, bell peppers, olive oil, white wine, black olives, salt, and pepper. The onions are finely sliced and sautéed in olive oil, while the rabbit is cut into pieces and browned in the same pan.


White wine is added to the pan and the mixture is simmered while the bell peppers are sautéeing in another pan. Once cooked, the bell peppers are added to the pan with the rabbit along with pitted olives. After about half an hour, the dish should be fully cooked and warm.


It is seasoned with salt and pepper before serving.
