Chorizo de Bilbao is a semi-cured sausage made from pork and beef, heavily seasoned with paprika. Despite its name, it originates from the Philippines, not Bilbao, Spain. The name was coined by Vicente Genato of the Genato Commercial Corporation in Manila, reflecting his family's roots in Bilbao.
Today, production has largely shifted to the American company Marca El Rey. This sausage is popular in the Philippines and among Filipino-American communities in the United States. Its ingredients are similar to other Filipino longganisas, with the addition of paprika giving it a distinct flavor and a dry, fine texture akin to pepperoni.
