Cappuccetto Rosso is an Italian semi-soft washed-rind cheese made from cow’s milk. The name can be translated as Little Red Riding Hood, referring to the reddish hue that the rind develops while aging – a result of it being wrapped in spruce bark, which gives it an earthy flavor with hints of mushrooms.
