Calisaya is an Italian-style amaro that was originally produced in the 17th century when cinchona calisaya bark was first introduced to Italy. The drink was a popular cocktail ingredient in the United States until the Prohibition, after which it completely disappeared.
It was revived by Elixir, an artisanal distillery in Oregon that employs a traditional Italian recipe which calls for maceration of cinchona calisaya bark from Peru and a selection of European botanicals in a neutral spirit. The final blend is incredibly aromatic, with a typical bittersweet finish.
