Potato stuffing is a traditional side dish originating from the Caribbean and it's especially popular in the Virgin Islands. The stuffing is usually made with a combination of white sweet potatoes, onions, bell peppers, olive oil, bay leaves, raisins, brown sugar, tomato paste, butter, milk, and black pepper.


There is no fixed recipe and every household tweaks the ingredients a bit, but the stuffing always contains potatoes, raisins, onions, sugar, and tomato paste. Once everything has been sautéed and mashed together, the potato stuffing is usually served as a side dish at Thanksgiving or Christmas.

Conch in butter sauce is a traditional dish originating from the Virgin Islands. The dish is usually made with a combination of conch, olive oil, garlic, onions, bell peppers, salt, thyme, red pepper flakes, butter, and lemon juice. The vegetables are sautéed in olive oil, while the butter and pieces of conch are added to the pan a bit later.


The dish is simmered in a bit of water until the sauce is reduced and becomes slightly thick. Once done, conch in butter sauce is traditionally served with peas and rice or fried plantains.

Dumb bread is a traditional bread hailing from the Virgin Islands. This rich, round loaf is usually made with a combination of flour, water, butter, sugar, baking powder, and milk. The dough is often additionally flavored with shredded coconut.


It is placed in a skillet over hot coals, while another layer of hot coals also goes on top of the skillet lid in order to cook the bread both from above and below. Once it becomes toasty and golden brown, the bread is ready to be enjoyed. The name dumb bread is derived from the dum-style of baking that was brought over to the Caribbean from India.
