Chinchón is an anise-based spirit hailing from a namesake city located in the Community of Madrid. The drink is distilled from a macerate of green anise seeds that are steeped in neutral alcohol and water. Depending on its sweetness, Chinchón comes in three different varieties: special dry, dry, and sweet.


Dry versions are mainly enjoyed as a drink, while the sweet Chinchón is often incorporated into desserts. Like other types of anise-based beverages, this Spanish version is also traditionally mixed with water to produce a cloudy drink that is best enjoyed as a digestif.

Sol y Sombra is an after-dinner cocktail made with a combination of equal parts anisette and brandy. In order to prepare it, both ingredients should be shaken with ice, then strained into a brandy snifter. The name Sol y Sombra translates to Sun and Shade, referring to different types of seats at bullfights and to the colors of the drink, where brandy represents the dark shades (sombra), while the clear anisette represents sun (sol).

Madrid-style lemonade is a lemon and wine-based cocktail that originated in Madrid. It combines freshly squeezed lemon juice, white wine, water, peaches or apples, sugar, lemon slices, and usually a cinnamon stick. This refreshing cocktail should be made in advance and chilled for several hours.


It is typically prepared in a pitcher and should be served over ice. Limonada is usually enjoyed during traditional fiestas in Madrid. It is a staple on San Isidro (May 15) and La Paloma (August 15).

4 Monos Viticultores is a collaborative project founded by four friends—Laura Robles, Javier García, David Moreno, and David Velasco—who share a passion for the Sierra de Gredos region near Madrid, Spain. Established in 2010, the winery focuses on producing authentic wines that reflect the unique terroir of the area.


The team cultivates approximately 14 hectares of vineyards, with 4 hectares owned by them and the remaining managed in collaboration with other growers. These vineyards are situated in the villages of San Martín de Valdeiglesias, Cadalso de los Vidrios, and Cenicientos, at elevations ranging from 650 to 1,000 meters above sea level.
