Bamboo shoots are edible sprouts of numerous bamboo species, popular throughout Asia and around the world. On their own, bamboo shoots are too tough and bitter for consumption, but once properly prepared (through cooking or canning), they have a mild, sweet, and nutty flavor.


They are mostly compared to heart of palm regarding flavor, although bamboo shoots are far more fibrous. The shoots are used in a variety of Asian broths and dishes. The benefits of consuming bamboo shoots are numerous, such as weight loss, strengthening of the immune system, and anti-inflammatory properties, and they contain proteins, vitamins, minerals, and a large amount of dietary fibers.


There is evidence in old Chinese literature from the Tang dynasty period about various health benefits of consuming the shoots. In Japan, bamboo shoots are known as the King of forest vegetables. They pair well with potatoes, beans, coconut milk, turmeric, fried pork, or various curries.
