The Ausseerland saibling is the type of Arctic char that can be found in the Ausseerland, a small region in Styria. The char prefers deep, cold waters with lots of oxygen and its greatest enemy is the Ausseerland trout. In the past, it was reserved only for the nobility.


Since there was no refrigerator at the time, the Ausseerland saibling was transported to the Viennese court either smoked or pickled. The Ausseerland saibling has a firm, light pink flesh and can be boiled, sautéed, fried, smoked, pickled, or eaten raw.
