Alla creta

Alla creta is a traditional technique for preparing food. Literally meaning in clay, this ancient technique is used for preparing whole birds, especially guinea fowl. The clay is moulded around a bird that has been seasoned, baked, and the clay is then broken with a hammer.


Nowadays, the name alla creta also refers to cooking birds in bird-shaped clay containers.
