Acciughe al verde is a traditional dish originating from Piedmont. The dish consists of anchovies in green sauce, or bagnet verde. In order to prepare it, salt-preserved anchovies are first washed and filleted, then topped with a sauce consisting of garlic, parsley, olive oil, white wine vinegar, and sometimes a pinch of hot pepper flakes.


In the past, this dish was a part of merenda si noira, a meal eaten by farmers late in the afternoon. Nowadays, acciughe al verde are served as an appetizer with bread and butter in most restaurants, or as an accompaniment to a glass of wine in old taverns.

Grissini are traditional Italian breadsticks with origins in Torino, Piemonte, a region in northwestern Italy. These snacks consist of crispy, thin, dry bread that can be additionally flavored with rosemary, sesame seeds, onions, or Parmesan cheese.


Grissini can be traced back to the 17th century, as they were invented to cure the health-related problems of Duke Vittorio Amedeo II of Savoy. Since the duke had problems with digestion, the doctor ordered Antonio Brunero, a Torino baker, to make a meal which the duke could easily digest.

Hailing from Piedmont, fritto misto alla piemontese is a rich, traditional gourmet specialty that consists of a wide range of ingredients (both sweet and savory), which have been dipped in eggs and then breaded before being deep-fried until nicely colored and crispy.


Typical food items used in this dish include meat and offal, chicken croquettes, porcini mushrooms, semolina fritters, amaretti di Monbaruzzo, and various types of vegetables and fruits such as apples, pears, zucchini, eggplants, and artichokes.
