Strangolapreti

Strangolapreti are traditional bread gnocchi from the Trento area, made with stale bread, spinach (or other green vegetables), milk, eggs, and flour. Their origins date to the 16th century and the ecumenical Council of Trent - they were traditionally prepared on Fridays because religious restrictions forbade the consumption of meat on that day. It is said that the gluttonous priests enjoyed this dish so much that they would eat them until they choked - hence the name strangolapreti, literary meaning priest stranglers.


Their green color can vary from light to very vibrant, depending on the quantities of greens used. The most traditional way to enjoy these hearty dumplings is with a simple browned butter and sage sauce, topped with some grated cheese.
