Salsiccia is a term often used as a universal name for different varieties of fresh Italian sausages made with minced or ground pork meat flavored with spices and stuffed in a natural pork or sheep casing. They are produced all over Italy, and the region of Liguria is no exception - many varieties are made there using the mixture of leaner and fattier cuts of pork, enriched with pancetta and different flavorings, most commonly salt, pepper, pepperoncini, cinnamon, cloves, nutmeg, or rosemary.
