Salsiccia di Pignone is a pork meat sausage enriched with pancetta, salt, pepper, nutmeg, cinnamon, and cloves. The fragrant mixture is placed in a natural casing and tied with a string every 10-12 cm, thus creating a link of small, brightly red sausages.
