(Cucumber with Moromi Miso)

Morokyu is a traditional dish that's usually served as a condiment accompanying other dishes. Especially favored during the summer, morokyu consists of crisp fresh cucumbers that are sliced and served with savory moromi miso sauce, which is often prepared with a combination of moromi miso (a special type of miso with wheat or barley and fermented rice), honey, garlic, and dried bonito flakes.


Decorative slices of cucumbers are especially appreciated.
