Cheera moru is a traditional curry originating from South India and it's especially popular in Kerala. The dish is usually made with a combination of spinach, dahi, tomatoes, ginger, hot peppers, shallots, garlic, vegetable oil, mustard seeds, fenugreek, curry leaves, turmeric, and salt.
The mustard seeds are fried in oil and mixed with fenugreek, garlic, hot peppers, shallots, curry leaves, and ginger. The mixture is sautéed until the shallots are browned. Tomatoes, turmeric, spinach, and salt are added to the pan while stirring everything, and the pan is then removed from the heat.
