Caprino (Apulia)

Caprino is a goat’s milk cheese made throughout Italy, in the region of Apulia mainly produced around the province of Lecce. There is a saying that the goat is the cow of the poor, so one might think that caprino is the cheese of the poor, but Apulian breeders might disagree; their goats and products made with goat's milk are widely appreciated, which makes them a valuable source of income.


Made with raw goat’s milk, caprino pugliese is a dry salted cheese left to mature for 6 months before it is ready to be consumed. During that time it develops a salty, slightly tangy flavor. It is usually served as a table cheese, or grated over pasta dishes.
