Železna or Kisla voda is a name for the water sourced from a mineral spring located close to the village of Solčava, in the Upper Savinja Valley, below Olševa mountain. The water is rich in iron, magnesium, and calcium.
It is slightly acidic, and it has a subtle metallic flavor and a small amount of carbon dioxide. It is also believed that it has some health beneficial effects. Kansui is an alkaline liquid, a solution of potassium carbonate and baking soda (sodium carbonate) that's widely used in Japan and China. This alkaline water or lye water is an essential ingredient in ramen noodles because it gives them their typical yellow hue and springy texture.
Kansui is available in most Asian markets, either in powder or liquid form. The potassium carbonate hardens the texture of noodles and gives them a stronger kansui aroma, while sodium carbonate softens the texture of the noodles and provides them with less kansui aromas, so the ratio is sometimes changed depending on the size of the noodles and other conditions.
