Fior di latte is an Australian cow's milk cheese produced in New South Wales. It is characterized by its mild, tangy, and milky flavor, and a pale yellow color, similar to that of Italian mozzarella cheese. The cheese has an elastic texture and melts easily, which is the reason why it is often used on pizzas and similar baked dishes.

Mainland is a New Zealander cheese made from pasteurized cow's milk. The cows are fed a diet of high-quality grass while grazing outdoors, resulting in a golden yellow color and sweet, creamy notes of the cheese. There are four types of Mainland cheese: sharp Cheddar (rich and sharp flavors), vintage Cheddar (strong), organic Cheddar (subtle and mild), and Egmont (nutty).

The Cheddars should be paired with wines such as Merlot, Pinot Noir, and Sauvignon Blanc, while Egmont should be paired with Chardonnay, Pinot Grigio, Riesling, Syrah, and sparkling wines.

Allium Piper is an Australian cheese hailing from Woodside. The cheese is made from a blend of Woodside Chevre (made from goat’s milk) and Allisford Farm’s organic hand-harvested garlic. The curd is drained for a few hours, then mixed with salt, crushed garlic, and black pepper.

The combination is drained for 10 days before consumption. The texture is soft and creamy, the aromas spicy, fresh, and garlicky, and the flavors are spicy and garlicky. Allium Piper is often used on cheeseboards and it’s recommended to serve it with lots of crusty bread.

TasteAtlas food rankings are based on the ratings of the TasteAtlas audience, with a series of mechanisms that recognize real users and that ignore bot, nationalist or local patriotic ratings, and give additional value to the ratings of users that the system recognizes as knowledgeable. TasteAtlas Rankings should not be seen as the final global conclusion about food. Their purpose is to promote excellent local foods, instill pride in traditional dishes, and arouse curiosity about dishes you haven’t tried.
