Best Lazian Olive Oil Types
Sabina extra virgin olive oil is perhaps one of the most renowned olive oils in Italy, although not much about it is known outside the country. It is produced in the Sabina hills, located between the provinces of Rieti and Rome, and the entire production process must be carried out in the region of Lazio.
The oil of Sabina is obtained as a single-varietal or in combination, from the ancient local cultivars, including Carboncella, Leccino, Raja, Frantoio, Pendolino, Olivastrone, Moraiolo, Olivago, Salviana and Rosciola.
Tuscia olive oil is emerald green with a golden hue and a fruity aroma reminiscent of freshly harvested olives. It has a mild fruity taste with a well balanced bitter and spicy aftertaste. Because of its versatile and pleasant flavor, Tuscia olive oil is capable of satisfying every palate and suitable for using in many traditional Italian dishes.
This extra virgin olive oil is produced in the Lazio region, namely the province of Viterbo, and has derived from olives of the Canino type. Although higher in quality, the oil content of Canino olives is in the lower range (about 14 to 15%) so the oil is pressed from other locally grown varieties: Caninese, Leccino, Pendolino, Maurino and Frantoio.
The oil is bright green in color and has a well-balanced taste of bitter and spicy notes. It is very low in acidity and has high levels of polyphenols and vitamin E. Canino oil is perfect for salad dressing, drizzling over bruschettas or various soups and vegetable dishes.
Produced in the province of Latina, located in the Lazio region, Colline Pontine extra virgin olive oil is predominantly made from the Itrana cultivar, a particularly large and fleshy variety, introduced to the wider Latina region by the refugees from ancient Sparta.
Depending on the harvesting period, the color of Colline Pontine oil varies from an intense yellow to bright green. It has a distinct aroma of green tomatoes, and a fruity to bitter taste. Apart from the top quality oil products, the Itrana olives are also largely consumed as table olives, marketed under the name of Gaeta olives.
