Sabina | Local Olive Oil From Province of Rieti, Italy | TasteAtlas

Sabina

Sabina extra virgin olive oil is perhaps one of the most renowned olive oils in Italy, although not much about it is known outside the country. It is produced in the Sabina hills, located between the provinces of Rieti and Rome, and the entire production process must be carried out in the region of Lazio.

The oil of Sabina is obtained as a single-varietal or in combination, from the ancient local cultivars, including Carboncella, Leccino, Raja, Frantoio, Pendolino, Olivastrone, Moraiolo, Olivago, Salviana and Rosciola.

Sabina oil has a golden-yellow color with shades of green, and a distinct fruity aroma. The taste is characterized by its low acidity and a slightly peppery finish. The extra virgin olive oil of Sabina is excellent with soups, salads, vegetables and grilled meats.
