Xiang gan

(香干)

Xiang gan is a type of dried Chinese tofu, known for its firm texture and ability to absorb flavors well, making it a popular ingredient in various dishes. It is made by pressing a block of firm or extra-firm tofu to remove excess moisture, then baking or frying it until it's thoroughly dried and has a chewy texture.
