Tenerumi

Tenerumi (lit. tendrils) are the tips, buds, and leaves of Sicilian summer squash, called zucchina or cucuzza in local dialect. Their flavor is pleasantly nutty with a slightly bitter aftertaste. It's recommended to simply boil tenerumi, then dress them with olive oil.


Alternatively, the tenerumi can be mixed with pasta and tomato sauce, then garnished with lots of black pepper for a traditional Sicilian summer dish.
