Spoja lorda

(Sfoglia lorda, Spoja lorda romagnola)

Spoja lorda is a traditional pasta dish originating from Emilia-Romagna, and it's a specialty of Ravenna. The dish consists of small egg pasta squares filled with eggs and cheese. The dough is usually made with a combination of flour and eggs, while the filling often contains ricotta or robiola, Parmigiano-Reggiano, eggs, salt, and nutmeg.


If desired, lemon zest can also be added to the filling. Once filled, spoja lorda is usually cooked in beef broth, and the dish is ready once the pasta squares float to the top. They're usually served warm with grated Parmigiano-Reggiano on top.
