Sharplaninski ovchi kashkaval is a variety of hard ripened cheese made with sheep's milk usually coming from indigenous sheep breeds that have been grazing freely on the Shar Mountains’ pastures for many generations. The cheese is prepared following traditional methods of preparation, and it is usually molded into a flat cylindrical form, but it is also commonly found in blocks.
This traditional variety of Macedonian cheese is distinguished by a yellowish color and a pliable structure, and it is prized for its excellent quality and a rich, distinctive flavor. Produced with high-quality and carefully selected sheep milk, this cheese is best enjoyed paired with a platter of cold cuts and a glass of fine Macedonian wine on the side.
