Sharplaninski ovchi kashkaval is a variety of hard ripened cheese made with sheep's milk usually coming from indigenous sheep breeds that have been grazing freely on the Shar Mountains’ pastures for many generations. The cheese is prepared following traditional methods of preparation, and it is usually molded into a flat cylindrical form, but it is also commonly found in blocks.
