Samoborska češnofka

(Samoborska češnjovka)

Samoborska češnofka or češnjovka is a traditional sausage originating from the city of Samobor. This smoked sausage is made with a combination of ground pork, and beef or veal, with pork fat and the addition of garlic, dry red wine, black pepper, sweet and hot paprika (or pickled hot peppers), and salt.

The mixture is stuffed into natural pork casings and shaped into pairs. The sausage is hot-smoked and enjoyed boiled, sautéed, or fried. The texture is elastic and succulent, the aromas are garlicky and smoky, while the flavor is that of boiled pork with a mild spiciness.

Each pair of sausages should weigh between 250 and 300 grams. The sausage links are sold as they are or packaged.
