"The roast suckling pig, shellacked a golden brown, came splayed out on an earthen dish. Our waiter picked up a white dish, and cut the piglet into pieces, not with a knife, but by using the plate, crisply crunching the carcass and its bones into quarters in the house's dramatic carving style. The skin was crackle-crisp, the meat meltingly tender, and, washed down with the ruby-red wine, I was close to swooning."

"I was brought here by my Spanish host family and told it was one of the oldest establishments in Segovia that boasts the traditional preparation of cochinillo, complete with the plate cutting to serve it. It was a historic, cozy yet lively atmosphere with large tables. It was a complete experience, not just a place to grab some food."
