Požeški vinogradarski ćevap is the Croatian city of Požega’s version of kebab. The dish consists of marinated pieces of pork and veal (or beef) with bacon and onions interspersed in between. All of the ingredients are skewered, then wrapped in caul fat and roasted over an open fire.
The dish is typically over 1 meter in length and it consists of about 20 kilograms of meat, so up to 30 people can be fed with one vinogradarski ćevap. In the past, it was prepared for festive occasions throughout the region, but over time it has lost some of its popularity.
