Nopales con huevo is a traditional dish originating from Central Mexico and consisting of nopal cactus with eggs. The dish is usually made with a combination of diced nopales, lard or oil, eggs, tomatoes, garlic, onions, chili peppers, and salt.
The lard is heated in a pan and all of the ingredients except the eggs are added to the pan, seasoned with salt, and cooked over medium heat. The mixture should be dry and nicely seasoned before the eggs are added to the combination and stirred rapidly until set.
