Jollof rice is Nigeria's national dish of Senegambian origin, that can be found in every country of West Africa with some variations in the ingredients. In order to prepare it, rice is cooked in a rich tomato sauce so that it soaks in all the flavors.


The most common ingredients found in jollof rice include rice, tomatoes, tomato paste, onions, salt, and pepper. On top of that, any kind of meat, vegetable, fish or spice can be added. It is important to have a delicious sauce, so in addition to tomatoes, there are also ingredients such as coconut milk, nutmeg, partminger (African basil leaf) and sometimes even Roiboos tea used in the sauce.

Attiéké is a traditional couscous consisting of fermented and ground cassava roots. It is usually accompanied by sliced onions, tomatoes, grilled chicken, or fried fish. This tasty dish is consumed by people of all ages for breakfast, lunch, and dinner, although it is traditionally prepared exclusively by women.


It can be bought at numerous local markets, either in individual portions or large bags.

Fufu is a staple side dish made by pounding cassava and unripe plantains together with a big wooden pole and mashing them while adding water. As it needs to be vigorously stirred, it usually takes two people to make it - one pounding it, and the other moving it around between the pounding.


Once the mixture is smooth, it gets shaped into small balls that are then placed in a stew or soup with meat. Similar to the Tanzanian ugali, an indentation is made in the ball, used for scooping up the sauce, with fufu acting as a spoon.


The texture is quite gummy and stretchy, while the flavor is bland, but dipping it into a stew gives fufu a spicy flavor that is slightly reminiscent of peanuts.

Originating from the Ivory Coast, kedjenou is a traditional chicken stew prepared with chicken pieces, eggplants, tomatoes, okra, onions, chili peppers, ginger, thyme, garlic, and chicken broth. The ingredients are placed in a sealed clay pot called canari, which is then placed over hot coals.


The pot is periodically shaken to keep the ingredients from sticking to the pot. Due to the fact that poultry is not so tender in the area, the stew is cooked for a long time. When done, kedjenou is typically served with attiéké (a starchy side dish) or white rice on the side.

Palm nut soup is a West African soup made with either palm fruit or palm pulp and meat, fish, crayfish, vegetables, and seasonings, but ingredients vary depending on the country or region. The soup can be found in Ghana, Cameroon, Nigeria, and Ivory Coast, and each country has a different name for it.


Some of the side dishes that are served with palm nut soup include fufu, omo tau, kwacoco (puréed and steamed cocoyams), rice, banku, and fonio.
