Medloqa is a traditional Damascene dessert known for its creamy texture, nutty flavor, and delicate floral aroma. This dessert is made using roasted semolina, which is cooked with butter, sugar, and rose water, forming a rich and aromatic base.


The semolina mixture is then layered with kashta (clotted cream) and whipped cream, resulting in a soft, melt-in-your-mouth texture. Finally, a generous amount of crushed pistachios is sprinkled on top, enhancing its visual appeal and nutty depth of flavor.


In Damascus, Madlouka is often served alongside Nabulsiah on the same plate, creating a contrast between the golden-brown Nabulsiah and the creamy white medloqa. The dessert is a specialty of historic sweet shops in Damascus, including Al-Baik Sweets in Bab Srija, Al-Wissam Sweets in Kafrsousa, and Shukriji in Al-Midan, each offering its own variation.
