Beaufort Chalet d'Alpage AOP is a distinguished French cheese crafted from raw cow's milk, exclusively sourced from the Tarine breed. This exceptional cheese is produced during the summer months, from June to October, in high-altitude chalets situated above 1,500 meters in the Savoie region.


The cows graze on rich alpine pastures, imparting unique floral and herbaceous notes to the milk. The cheese is made immediately after milking, ensuring freshness and quality. Each wheel is cylindrical, with a concave heel, measuring approximately 60 cm in diameter and 12 to 14 cm in thickness, weighing between 40 and 60 kg.


The aging process occurs in cool, humid cellars, where the wheels are regularly washed and brushed to develop their characteristic rind. After a minimum of 12 months of maturation, Beaufort Chalet d'Alpage reveals a supple texture and a complex flavor profile, featuring fruity and floral notes with a hint of nuttiness.


This cheese is highly regarded for its rich taste and is often referred to as the "Prince of Gruyères." It pairs wonderfully with robust red wines and can be enjoyed on its own or incorporated into various culinary dishes.
