Chile pasilla con queso

Chile pasilla con queso is a traditional chili pepper-based dish originating from Chihuahua, Oaxaca, and Puebla. The dish is usually made with a combination of dry-roasted pasilla chili peppers, onions, tomatoes, olive oil, salt, tortillas, and Oaxaca cheese or mozzarella.


The chili peppers are soaked in water, then added to the pan with sautéed onions and tomatoes. The combination is shortly cooked, and the chili water is poured into the pan, then seasoned with salt. The cheese is layered on top, and the mixture is simmered until the cheese begins to melt.


Once done, the dish is served hot with warm tortillas on the side.
